Eggplant Roasted Fan

If you love eggplant you no doubt have had eggplant parmesan.  While that is a delicious plate this is another way to eat it.  This is a very healthy style; all ingredients are fresh and nutritious.  Give this a shot next time you want to try out something new with eggplant.
Roasted eggplant fan
Ingredients:
Eggplant
Tomatoes
Mozzarella Cheese
Feta Cheese
Salt & Pepper
Thyme
Olive Oil

Directions: Heat Oven to 450 degrees

  1. Wash & dry eggplant.  Starting from stem, with sharp knife cut from top to bottom in ΒΌ-1/2 inch slices
  2. Place on parchment lined baking pan and fan out cut eggplant
  3. Slice tomatoes into rounds
  4. Slice mozzarella in rounds, then cut in half
  5. Place a slice of tomato, then slice of cheese, and repeat down the length of each eggplant slice
  6. When all eggplant slices are filled with tomato & cheese, crumble feta cheese over stuffed eggplant; sprinkle salt, pepper & thyme; drizzle olive oil over all.
  7. Bake at 450 degrees for 15-20 minutes; cool for 5 minutes and serve
